Three Easy Breakfast Recipes for Summer

Summer is officially here, which means the temperatures are heating up! Eating for the seasons means eating lighter foods that will not weigh you down during the hot summer months. Think fresh fruit, fresh salads, and smoothies. Yum! Today we are sharing three breakfast recipes that are perfect for the dog days of summer.

Berry Tart Recipe

Berry Tart

1 - 1 ½ cups of your favorite Paleo Scavenger Granola (We recommend the Original)
1 - 2 tablespoons of melted coconut oil
1 cup of Greek Yogurt plain or vanilla
1 - 2 cups of fresh berries (strawberries, blueberries, raspberries, blackberries)


1.) Preheat oven to 325 degrees.
2.) Place ¼ to ½ cup of Paleo Scavenger Granola into a small pan.
3.) Add 1 tablespoon of melted coconut oil then take the back of a spoon and press the Paleo Scavenger Granola into the baking dish to form a solid tart crust.
4.) Place in the oven and bake 10 minutes or until golden brown.
5.) Remove tart crust from oven and let cool.
6.) Add desired amount of Greek yogurt and fresh berries. Serve immediately to avoid a soggy crust!

Chocolate Chia Seed Pudding

Chocolate Chia Pudding

2 tablespoons of chia seeds
1 tablespoon of cocoa powder
1 cup of unsweetened almond milk
Pinch of sea salt
Your favorite Paleo Scavenger Granola
Fresh fruit - Your pick! (We recommend fresh berries from the local farmer’s market. Blueberries and raspberries are both in season!)

1.) Mix the chia seeds, cocoa powder, unsweetened almond milk, and sea salt together in a bowl. Whisk until the cocoa powder has completely dissolved.
2.) Cover and place in the refrigerator overnight or until the mixture has thickened into a jelly-like texture.
3.) Scoop into a glass and add desired layers of fresh fruit to create a colorful pattern.
4.) Sprinkle with Paleo Scavenger Granola and top with a piece of fresh fruit for a final pop of color and flavor!

1-2 cups of Paleo Scavenger Granola (We recommend the Original)
½ cup chocolate chips
½ teaspoon of ground cinnamon 
½ teaspoon of sea salt
2 ripe bananas, mashed
½ cup of nut butter (We recommend almond or cashew butter)
¼ cup of honey

1.) Preheat oven to 325 degrees.
2.) In a large bowl, combine all of the dry ingredients: Paleo Scavenger Granola, chocolate chips, cinnamon and sea salt.
3.) In a second bowl, mix together all of the wet ingredients: mashed bananas, nut butter and honey.
4.) Combine the dry and wet ingredients together and mix thoroughly.
5.) Spoon cookie batter onto baking sheet. Remember to spray your cookie sheet with coconut oil or line with parchment paper to avoid a kitchen disaster!
6.) Sprinkle with shredded, unsweetened coconut flakes for an added taste of summer.
7.) Bake 12-15 minutes or until cookies are golden brown around the edges.
8.) Remove from the oven. Let cool and enjoy!
